Processing
The "red honey" process is a type of natural or "dry" processing, which means that some of the surrounding coffee cherry is left on the seed while the coffee is dried. Specifically: the pulped cherry is fermented for 14 hrs without water and put on raised beds before warehousing.
Producer
Ashenafi is a hard working producer who owns a washing station and dry processing site in Aricha and Ela Telicha. He got his start in coffee back in 2005 working with washed coffees, and he expanded into natural coffee in 2010. The washing station has 2.2 hectares of space, sufficient for 240 coffee beds. He owns a coffee farm of 3.5 hectares of at Ella Telicha.
Ethiopia has a beautiful culture of giving back to one’s community, and Ashenafi is proud to give back in addition to buying coffee from small farmers. He supplies compost to local coffee growers to enhance their productivity, and he built a meeting hall at nearby Ella Telicha kebele. He also constructed three residential houses for elderly community members.
