Fabian is a fourth generation producer. His father Alvaro started learning more about fermentation and processing, and achieved positive results and higher coffee quality.

The family began this journey in 2006, when they produced clean washed coffees. In 2013 they started modifying their fermentation practices with good results. Finally, after many years of tenacious work, they saw a big boost in quality in 2018.

Only ripe cherries are collected. The coffee undergoes 14 hours of oxidation in plastic hoppers, then is de-pulped and fermented in tanks for 24 hours. Afterwards, water is added to the tank and the coffee remains submerged for another 24 hours. Dried in drying shed for 15 days.
